PERMACULTURE GARDEN
Our regenerative garden is the heart of Mundekulla’s farm-to-table philosophy, supplying the restaurant with fresh, seasonal produce grown just steps from the kitchen. Through careful design and co-planting, the garden yields an ever-changing harvest of vegetables, herbs, and edible flowers that inspire our chefs’ daily menus.
In 2023, we introduced agroforestry rows, interplanting fruit trees, berry bushes, and nitrogen-fixing shrubs among vegetable beds to boost biodiversity, improve soil health, and create a more resilient growing system. We combine this with growing annual vegetables in between rows.
Syntropic Farming Project
Mundekulla is delighted to have received LEADER funding to expand our existing vegetable cultivation area with a pilot project in agroforestry. We have engaged TERRA, a consultancy specialising in Syntropic Farming, a specific agroforestry method based on dense, diverse planting and intensive hands-on management, including frequent pruning to stimulate growth.
The method mimics natural ecological succession and makes the most of photosynthesis and plant growth. This, in turn, helps fruit trees and berry bushes establish themselves more quickly while building rich and healthy soil life. The approach has been shown to reduce the need for watering and fertilisation, while also increasing resilience to environmental disturbances through the creation of beneficial microclimates.
Together with TERRA, we developed a design plan for the project in spring 2025 and held an implementation workshop in autumn 2025. Over the two years following planting, TERRA will provide on-site visits and practical support to help us maintain the growing areas, continue implementation, establish effective management routines, and further develop our business models.
Our ambition is to offer courses and document the project as a model for Syntropic Farming in the Nordic region. We also aim to create opportunities for research, including biodiversity surveys and soil sampling, to monitor and evaluate the results over time.

You'll learn practical skills and insights to transform organic waste into valuable nutrients, fostering a healthier garden ecosystem. Duration 2 hours.

“Hands-in-the-Soil” Participate in Garden Work
Embrace the joy of working in the garden with our “Hands-in-the-Soil” program. Spend a half or full day connecting with nature, learning about sustainable practices, and nurturing the plants that thrive in Mundekulla. Feel free to taste as you go! Lunch with our staff is included. For those looking to delve deeper, we can arrange longer-term garden experiences that offer a fulfilling way to immerse yourself in the rhythms of the earth.
